I've spent many a night at Carmines when visiting NY. Great restaurant and the cookbook is good too. Lots of good recipes and photos. Try the Spiedini Alla Romano (the second recipe in the book). We don't get food like this in Florida. Olive Garden is Florida Italian.
I made soup, marinara sauce and meatballs so far and everything turned out awesome. the only tweaks were double the dialing in the pasta fagioli and add sugar or carrots to take the acidity out of the marinana. I plan to cook my way through the whole book....shoulda been born italian!!
This is the best cookbook I have ever owned. The recipes are super easy to follow. So far I've made 3 recipes from this book and I have to admit, they were as good as the restaurant. When I tried the first recipe (Rigatoni Country Style), I thought to myself "I got lucky". But then when the Meatballs turned out delicious and the Chicken Scapariello was outstanding, I realized "this cookbook is foolproof". Extremely underwhelming! I purchased this book after reading the raving reviews about Carmine's amazing meatballs. I cooked the meatballs with the marinara sauce exactly as written and I could not have been much more disappointed. The meatballs were decent at best, a bit bland for my taste. The marinara sauce was nothing special on it's own. The recipe calls for adding a large Spanish onion with an additional tablespoon of garlic, before adding the meatballs to the already cooked marinara. This made for a very acidic finished product. This sauce was in desperate need of wine or some type of sweetness to balance the heavy acidity. I was interested in how they used their Casino Butter recipe. There is no reference to how this recipe is used and it is not listed in the index. I doubt that I'll be trying any of the other recipes in this book.
I bought the book in anticipation of dining at Carmine's. The cookbook included great background on the restaurant and I was able to get a "feel" for what we were going to experience. The meal was excellent and I will be trying the recipe or meatballs. They were deliciously moist and not too dense.
If you like Italian food, THIS book is a must have. I've pretty much done every recipe in the book and all are great.If you're looking for a quick Italian meal, this is not the book for you. Spending time to make it right is what this recipe book is all about.Highly recommend it.
I have made 2 recipes out of this book so far, the marinara sauce and peppers and onions. AMAZING! Everone knows how to make their own spaghetti sauce, but if you just try this one out you won't be sorry. Delicious! No leftovers, even my pickiest child ate her entire plate.
I use this book at least 3x a week. Must check out the recipe for Brown sauce, the meatball recipe is amazing, they are so soft and delicious. Really good recipes. A must have cook book if you like Italian food.
